Alas, the mung bean sprouts didn't make it. In retrospect, I kept them too wet, and they promptly molded. After throwing out the mess, I looked up how I should have done it in the first place, and I was never supposed to leave them sitting above/in water like that. Oops. And you're supposed to rinse them daily, presumably to get any fungus off them. So, trying again with another batch.

You can sprout lentils or wheat berries the same way. Rinse, drain all the water that you can, and spread the beans out in a single layer. (I usually lay the jar on its side on the windowsill above the sink.) You can get the vitamin C boost after as little as one day of sprouting, well before they LOOK like sprouts, so taste every day and decide when you want to eat them.

The other thing is, if you like sprouts, either have two different kinds started several days apart, or simply stagger the days, so that jar A is three or four days ahead of jar B. That way, you're less likely to have supply gaps.
