Sweet Potato Casserole
A holiday classic. Got this recipe from my mother, who got it in French Cooking class, back when she was studying restaurant management.
6 sweet potatoes or yams, cooked, drained, peeled and mashed
1/4 cup butter, unsalted (divided)
6 Tbs brown sugar, firmly packed (divided)
3 Tbs dark rum
1/2 tsp salt
1/3 tsp pepper
2 cans mandarin oranges (or 1 big can), drained
2 or 3 Tbs Pecans, chopped.
Mix mashed sweet potatoes, 2 Tbs butter, 4 Tbs brown sugar, rum, salt, and pepper. Mix in one can (or 1/2 big can) of Mandarin oranges and turn into baking dish. Arrange remaining oranges on top. Combine remaining butter, sugar and pecans. Sprinkle over top, back 30 min. at 375°F. Yield about 6 servings.
Can be made ahead of time and refrigerated until ready to cook. If chilled, allow additional time to heat up.
